Well, practice on cheap knives before messing with edge on your good knife. There are three types of hand sharpening techniques. A diamond sharpern, which is a nail file on steroid, tradition stone (wet or dry), and stone & ceramic combo traingle system like the Syderco Sharpmaker. The most practical is the dry stone combo but doesn't get as sharp as a wet stone combo. the diamond sharpener requires a little more skill and patience but sharpens faster, when used correctly, than a stone combo. The traingle sharpening system will get the best edge but requires enough practice to ruin more than just one knife. Read up on the different types of edges so you can identify what you are sharpening and read up on hand sharpening techniques with a stone. You should be able to hand sharpen with a stone before trying anything else. Also, good stones don't have to be expensive stones. For example, you can get a good course/fine combo stone by Norton for a reasonable price. The best thing to practice on is kitchen knives and work your way up to things like hunting knives. Remember, after enough practice it becomes an art only because you did your homework and asked questions when needed.

Depends on the knife. What angle is the knife?

well i think it is at 35* as the sharpener it comes with is set as that
Invest in a Spyderco sharpmaker, it works great, does not require skill beyond watching the DVD that comes with it and it will sharpen both plain and serrated edges along with a bunch of other stuff like scissors.
I just mainly use a DMT stone to sharpen all my knives now. I have a lanskey and it works well also. I have a power tormek copy but I used the wheel up sharpening knives. I need another one. Most of my hard use knives I sharpen at 40 degrees.(20 per side). I changed a few of my hard use knives obtuse edges on the tormek machine. It's very fast for this.
